Ingredients:
- 4 cups all-purpose flour
- 2 1/4 tsp active dry yeast
- 1 1/2 tsp salt
- 1 1/2 cups warm water
- 2 tbsp sugar
- 1 cup shredded cheddar cheese
- 2-3 jalapeno peppers, finely chopped
- 1/4 cup cornmeal for dusting
Instructions:
In a mixing bowl, combine warm water, sugar, and yeast
Let it sit for 5-10 minutes until it becomes foamy
Add the salt and flour to the yeast mixture, and mix until a dough forms
Knead the dough on a floured surface for about 5 minutes until its smooth and elastic
Place the dough in a greased bowl, cover it, and let it rise for 1 hour, or until doubled in size
Punch down the dough and knead in the shredded cheddar cheese and chopped jalapeno peppers
Divide the dough into 8 equal portions and shape them into bagels
Place them on a baking sheet dusted with cornmeal
Cover the bagels and let them rise for an additional 30 minutes
Preheat your oven to 425F 220C
Bring a large pot of water to a boil and carefully add the bagels
Boil for 1-2 minutes on each side
Place the boiled bagels back on the baking sheet and bake in the preheated oven for 15-20 minutes, or until they are golden brown and cooked through
Let the bagels cool on a wire rack before serving
