Spinach Bacon Crepes with Hollandaise Sauce

With this delicious Spinach Bacon Crepes and hollandaise sauce on top, you can have a great brunch. Great for a treat on the weekend

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 cup fresh spinach, chopped
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded Gruyere cheese
  • 1 cup hollandaise sauce store-bought or homemade

Instructions:

Put the flour, eggs, milk, melted butter, and salt in a blender

Mix until its smooth

Put a nonstick skillet on medium heat and use cooking spray or butter to lightly coat it

Add 1/4 cup of the crepe batter to the pan and swirl it around to cover the bottom evenly

Let it cook for one to two minutes, or until the edges begin to come off

After flipping the crepe, cook for an extra one to two minutes, until its just barely golden

Do it again with the rest of the batter to make 4 crepes

Put the chopped spinach in a different pan and cook it until it wilts

Take it off the heat and set it aside

On each crepe, put some of the cooked spinach, bacon bits, and shredded Gruyere cheese

To make triangles, fold the crepes in half and then in half again

Spread hollandaise sauce on top of the crepes

If you want, add more bacon and spinach to the top

Hollandaise sauce and spinach bacon crepes are great together

Serve them hot and enjoy
