Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups marshmallow creme
- 1 cup semisweet chocolate chips
- 2 tablespoons vegetable shortening
Instructions:
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
Put the softened butter and granulated sugar in a large bowl and mix them together until they are light and fluffy
Add the egg and vanilla extract and mix them in well
Mix the cocoa powder, baking powder, salt, and flour in a different bowl using a whisk
Mix the dry ingredients into the wet ingredients one at a time until a dough forms
Take tablespoon-sized chunks of dough and roll them into balls
Put them on the baking sheet that has been prepared and use your fingers to make them a little flatter
After the oven is hot, bake the cookies for 10 to 12 minutes, or until they are set
As they cool, theyll get firmer
After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way
Put some marshmallow creme on the flat side of half of the cookies once they are completely cool
To make sandwich cookies, put one cookie on top of each other
The chocolate chips and vegetable shortening should be melted in 30 second increments in a bowl that can go in the microwave
Stir the mixture between each increment until it is smooth and melted
Let any extra chocolate drip off of each sandwich cookie as you dip it halfway into the melted chocolate mixture
Line a baking sheet with parchment paper and set the dipped cookies on it
Wait for the chocolate to set
