Ingredients:
- 1 cup natural peanut butter
- 1/4 cup erythritol or preferred keto-friendly sweetener
- 1 large egg
- 1/2 cup sugar-free chocolate chips
- 1 tablespoon coconut oil
Instructions:
Preheat oven to 350F 175C
In a bowl, mix peanut butter, erythritol, and egg until well combined
Roll the dough into small balls and place them on a baking sheet lined with parchment paper
Flatten each ball with a fork, making a crisscross pattern
Bake for 10-12 minutes until lightly golden
Let cookies cool completely
In a microwave-safe bowl, melt chocolate chips and coconut oil together in 30-second intervals, stirring until smooth
Dip each cookie halfway into the melted chocolate mixture and place them back on the parchment paper
Place cookies in the fridge for about 10 minutes to allow the chocolate to set
