Ingredients:
- 1 1/2 cups gluten-free all-purpose flour
- 3/4 cup cocoa powder
- 1 cup coconut sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup almond milk
- 1/3 cup coconut oil, melted
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- Vegan chocolate chips, for decorating
- Vegan pretzel sticks, for decorating
- Vegan candy corn, for decorating
- Vegan chocolate frosting
Instructions:
Preheat the oven to 350F 175C and line a cupcake tin with liners
In a large bowl, whisk together flour, cocoa powder, coconut sugar, baking soda, and salt
Add almond milk, melted coconut oil, apple cider vinegar, and vanilla extract to the dry ingredients
Mix until well combined
Pour the batter into the cupcake liners, filling each about 2/3 full
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow the cupcakes to cool completely before decorating
Spread a layer of vegan chocolate frosting on each cupcake
Insert two pretzel sticks into the top of each cupcake to resemble straw hair
Place two vegan candy corns below the pretzel sticks for eyes
Use vegan chocolate chips to create a mouth below the eyes
