Ingredients:
- 4 chicken breasts, boneless and skinless
- 1 cup shredded coconut
- 1/2 cup breadcrumbs
- 1/4 cup flour
- 2 eggs, beaten
- Salt and pepper to taste
- Cooking oil spray
Instructions:
Get the oven ready by heating it up to 400F 200C
Shred the coconut and mix it with the breadcrumbs, flour, salt, and pepper in a shallow bowl
Dip each chicken breast in eggs that have been beaten, and then cover it all over with the coconut mixture
Line a baking sheet with parchment paper and put the chicken breasts on it
Spray a little cooking oil spray on top of each chicken breast
After the oven is hot, bake the chicken for 25 to 30 minutes, or until it is fully cooked and the coating is golden and crispy
