A comforting and creamy chowder full of soft salmon chunks, potatoes, and fragrant vegetables. Great for a warm meal on a cold day.
Ingredients:
- 2 tablespoons unsalted butter
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 stalks celery, chopped
- 2 carrots, chopped
- 2 cups diced potatoes
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried dill
- 1 bay leaf
- 1 pound skinless salmon fillet, cut into chunks
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions:
In a large pot, melt the butter over medium heat
Add the onion, garlic, celery, and carrots
Cook until softened, about 5 minutes
Add the diced potatoes, broth, thyme, dill, and bay leaf
Bring to a simmer and cook until the potatoes are tender, about 15 minutes
Add the salmon chunks and cook until the salmon is cooked through, about 5 minutes
Stir in the heavy cream and season with salt and pepper to taste
Remove the bay leaf and discard
Serve hot, garnished with chopped fresh parsley
