Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup brewed coffee cooled
- 1/2 cup dulce de leche for filling
- 1/2 cup unsalted butter for frosting
- 2 cups powdered sugar for frosting
- 1/4 cup unsweetened cocoa powder for frosting
- 1/4 cup heavy cream for frosting
- 1/2 tsp vanilla extract for frosting
- Chocolate shavings or sprinkles for decoration
Instructions:
Preheat your oven to 350F 175C
Line a cupcake pan with paper liners
In a bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt
In another bowl, beat the eggs, then add the vegetable oil, vanilla extract, buttermilk, and brewed coffee
Mix well
Combine the wet and dry ingredients, mixing until the batter is smooth and well-incorporated
Fill each cupcake liner 2/3 full with batter
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow the cupcakes to cool completely
Once cooled, use a cupcake corer or a knife to make a small hole in the center of each cupcake
Fill each hole with dulce de leche
For the frosting, beat the unsalted butter until creamy
Add powdered sugar, cocoa powder, heavy cream, and vanilla extract
Beat until smooth and fluffy
Frost the cupcakes using a piping bag or a spatula
Decorate with chocolate shavings or sprinkles
Serve and enjoy
