Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup strawberry puree
- 1/4 cup milk
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup diced strawberries fresh or frozen
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners
In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt
Set aside
In a separate bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy
Beat in the eggs, one at a time, and stir in the vanilla extract
Combine the sour cream, strawberry puree, and milk in another bowl
Gradually add the dry ingredients and the sour cream mixture to the butter mixture, alternating between the two, beginning and ending with the dry ingredients
Mix until just combined
Gently fold in the diced strawberries
Scoop the batter into the prepared cupcake liners, filling each about 2/3 full
In a separate bowl, beat together the softened cream cheese, 1/4 cup granulated sugar, egg, and 1 tsp vanilla extract until smooth
Place a dollop of the cream cheese mixture on top of each cupcake batter
Use a toothpick or skewer to swirl the cream cheese mixture into the cupcake batter to create a marbled effect
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
Once cooled, you can optionally top with additional diced strawberries or frosting of your choice
