Ingredients:
- 1 lb boneless chicken breast, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup couscous
- 1 1/4 cups chicken broth
- 1/2 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Tzatziki sauce for serving
Instructions:
To make a marinade, put olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper in a bowl
Make sure the chicken cubes are well covered when you add them to the marinade
